Springfield, IL – Illinois fire-safety officials are offering tips on preventing tragedy on Thanksgiving - the leading day for cooking fires in the U.S. Statistics compiled by the National Fire Protection Association show Illinois has the second most fires on Thanksgiving during the past five years. Only Texas has more. The state fire marshal's office says the biggest problem is the use of deep fryers. Experts say they tend to be top-heavy and can tip, overheat, or spill oil, causing fires and burns. Officials say cooks should keep their fryer in view in an open area. Cooks should thaw and dry the turkey and raise and lower fryer food slowly to prevent splatters. If the oil begins to smoke, turn it off.
